Tomatoes are so nutrient rich, supplying vitamin C,
potassium and lycopene, an anti-oxidant that benefits cancer and
heart disease prevention and anti-inflammatory activity. (1,2) To boost
absorption of lycopene, eat tomatoes with some flavorful,
healthy fats like olives, avocados or related oils. (3) Bell and
chili peppers are filled with vitamins C, A, E, K1 as
well as potassium, folic acid and fiber. [We all could use
a bit more fiber in our diets! Speaking of fiber,
green beans are marvelous sources. Plus,
they have many proteins, carotenoids, and
